Any basic tips and secrets on how to make great caribbean and african -american dishes from scratch.?

I need to learn how to cook. I have dozens of cookbooks with alot of wonderful recipes. To my dismay, not all recipes turn out like it should. I need cooking tips, secrets and rudimentary guide to cooking from sratch.

Oven Fried Chicken and Bananas This recipe comes from the archives of Coco Casa Cream of Coconut. 6 lbs chickens, cut up into serving portions (2 chickens) salt and pepper, to taste 1 cup cream of coconut or coconut milk 2 tablespoons lemon juice 6 medium bananas, peeled and cut in half crosswise (two thick pieces, not flat) 2 1/2 cups cornflake crumbs 3/4 cup melted butter or margarine Season all sides of the chicken pieces with salt and pepper. Mix the coconut milk with the lemon juice. Dip each banana piece in the liquid and roll in the cornflake crumbs (pressly firmly to help adhere). Place the chicken pieces in a single layer on a greased baking sheet and drizzle with half of the butter. Bake at 350°F for 45 minutes. Add the bananas and drizzle them with the remaining butter. Bake for an additional 15 minutes. THIS IS AWSOME!!!!!!
  2. before I began my career as a chef I was in the same place you are. I had many recipes that sounded great but didn't know how to execute the instructions. you need a mentor, someone willing to answer all of your questions with lots of experience in a kitchen. they don't have to be a professional cook, just someone who likes food, makes it often and makes it well. I have been to culinary school and worked as a chef/cook for the last 13 years, and my most memorable teacher is a German woman all of 73 years old who have reinforced every technique I ever learned in school and has helped me develope my sense of taste beyond compare... good luck, community colleges have classes too...check them out...
